Gallaher is the original author of the environmental science program at Lipscomb University and Abilene Christian University.

He has consulted on various sustainability projects in a variety of developing nations in Central America and Africa.

He spent time in Nicaragua doing research on the international influence of biofuels.
His research interest is in ethnobotany, herbal medicines, and policy sustainability.
